Whether you are following a low carb or keto diet, or just trying to make healthier choices overall, cauliflower crust pizza is perfect for you! Using just a few ingredients to make a simple cauliflower crust, you can add a variety of your favorite pizza toppings.

There have been lots of cauliflower crust pizza recipes popping up all over the place, and I have been wanting to try one after the success of the cauliflower rice and creamy, cheesy cauliflower mash. But, I have noticed that most of them have a ton of cheese, usually a cup.

In my opinion, all though this probably tastes great, it defeats the purpose to some extent because you add so much fat and calories from the cheese. After experimenting a bit, I found I was able to get a pretty crispy crust using just 1/4 cup cheese and a whole egg.

Key Ingredients For Cauliflower Crust Pizza Recipe

The following ingredients are what I used to make a homemade cauliflower crust for my pizza. You can then add your favorite toppings and sauce.

  • Cauliflower Florets: I used about 3 cups of cauliflower florets, which is about an entire head of cauliflower.
  • Garlic: A fresh garlic clove will have a lot more flavor than garlic powder, so I suggest using it if you can.
  • Egg: This binds all the ingredients together. It’s a very important ingredient.
  • Cheese: Part-skim mozzarella cheese has fewer fat and calories, so use it. If you aren’t concerned about the amount of those, you can use full-fat cheese. I mixed it with some shredded parmesan cheese.
  • Spices: Italian spices are the best ones to use in any crust you make. I used oregano, parsley, basil, salt, and pepper.

What To Serve With Low-Carb Pizza

What do you like to eat with your pizza? You can make healthier versions of your favorite foods easily. If you enjoy munching on chicken tenders with your pizza, then make some baked coconut chicken fingers. They are crispy and a lot of fun to dip in a low-calorie marinara sauce.

You can’t go wrong with this robust chicken cobb salad. It is packed with more toppings than you can count – and they are all good for you too!

Or, make this crispy parmesan roasted broccoli. It’s ready in just 20 minutes and full of nutrients to fuel your body.

Recipe Tips And Ideas For The Best Cauliflower Crust Pizza

Follow these tips to make sure that this crust turns out crispy and flavorful every single time!

  • Use a food processor to chop up the cauliflower florets. They need to be chopped up so small that they look like rice.
  • You might have to process the cauliflower in a few batches. This will help you make sure that all the pieces are the same size.
  • Do not add water when you heat up the cauliflower in the microwave. If you do, it will have way too much moisture and make the crust softer.
  • If you are having trouble pressing the cauliflower crust and making it really thin, use a rolling pin.

Frequently Asked Questions About Cauliflower Pizza

Here are some questions I frequently get asked about by some readers…

Can you use frozen cauliflower rice to make pizza crust?

I do not recommend using frozen cauliflower rice to make the pizza crust as it has way too much moisture in it. However, if you want to try using it, use a cheesecloth to squeeze out as much liquid as possible from the rice.

Can you freeze cauliflower pizza crust?

Yes! You can absolutely freeze your cauliflower pizza crust and save it to use for later. Just let it cool completely, then wrap it up in foil to store. It will stay fresh in the freezer for about 6 months.

What are the healthiest toppings to put on a pizza?

The healthiest toppings are ones that are high in fiber and low in fat and calories. Go for things like vegetables, lean meats, and even some fruit. Some of my favorite healthy pizza toppings are:

  • Peppers
  • Ground Turkey
  • Ground Beef
  • Ham
  • Onions
  • Olives
  • Tomatoes

Why is my cauliflower crust doughy in the middle?

This might be because you didn’t roll it out thin enough. Try to roll the crust out as thin as you can. Also, make sure the entire crust is even. If you have thicker spots in the middle, they will take longer to bake – while the edges burn.
