Cheesy Scalloped Potatoes with Bacon


This Cheesy Scalloped Potatoes with Bacon recipe is a classic cozy side dish, dressed up to be extra decadent.

For a cozy, satisfying side dish, it’s hard to beat scalloped potatoes. Those thin slices of tender potato, layered in a rich, golden, creamy sauce, just melt in your mouth. I have two different recipes for them. A slow cooker scalloped potato and an Instant Pot scalloped potato recipe.

Now, a lot of people know that if you want to make a heartier main dish out of scalloped potatoes, you can layer some ham in there. So I figured, if it works with ham, why not bacon? A few slices of crisp, cooked bacon would add a salty, smoky edge to the flavor, as well as a bit of crunch to vary the texture.

Recipe Notes:

  • If you would like a browner top to the scalloped potatoes, turn on the oven broiler for a couple of minutes at the end of the cooking time. Watch them carefully so that they don’t get too dark.
  • You can change up the cheeses in this recipe if you like, a mild cheddar, mozzarella, Gouda or fontina all work well instead of the gruyere.
  • The fresh thyme can be substituted with 2 teaspoons of dried thyme.
  • These potatoes will keep for up to 3 days covered in the refrigerator. To reheat them cover with aluminum foil and bake in the oven at 325F for about 25 minutes, until heated through.

Cheesy Scalloped Potatoes with Bacon

  1. Preheat the oven to 350F. Grease an 8×8 inch baking dish. Set aside.ingredients for cheesy scalloped potatoes with bacon
  2. In a small saucepan, over medium heat, melt the butter.
  3. Add the onions, garlic and thyme and cook for about 3 minutes, until the onions are tender. Set aside. cooked onions, butter and seasoning in pot
  4. Layer 1/3 of the potato slices in the bottom of the prepared baking dish. Season with a sprinkle of salt and pepper.potato slices and pepper on in pan
  5. Place ½ of the onion mixture evenly over the top of the potato layer. onion mixture added to top of potatoes

  7. Sprinkle ½ of the grated gruyere cheese over the top of the bacon layer.cheese sprinkled on top of bacon

  9. Place the remaining 1/3 of the potatoes evenly on top.layer of potatoes added to top of shredded cheese
  10. Pour the cream over the top. Cover with tin foil and bake for 1 hour.cream being poured over potato slices
  11. Uncover and place the slices of brie cheese over the top of the potatoes. Cook for 30-35 minutes more, until the brie has melted and the potatoes are fork tender.brie slices added to top of potatoes

Cheesy Scalloped Potatoes

Ingredients

  • 2 tablespoons butter
  • 1 large yellow onion diced
  • 2 cloves garlic minced
  • 2 tablespoons fresh thyme leaves
  • 6 medium white potatoes thinly sliced
  • Salt & Fresh ground black pepper
  • 8 slices bacon chopped & cooked crisp
  • 1 cup gruyere cheese grated
  • 1 cup heavy cream
  • 4.5 oz small wheel of brie cheese sliced
  • Fresh chopped parsley for garnish

Instructions

  • Preheat the oven to 350F. Grease an 8×8 inch baking dish. Set aside.
