I’ve found the secret to enjoying a packed lunch every day is variety. Instead of packing the same old sandwich or salad week after week, experiment. Try different types of food, different flavors, different world cuisines.
My latest Edamame Easy Lunchbox Idea does all three of these. Instead of a sandwich, wrap, or any of the usual things that most people think of as lunch, it’s got exactly three ingredients: steamed green edamame pods, white rice, and soy sauce.
Now, maybe you’re thinking, “That can’t possibly be enough for a filling lunch!” But you forget, edamame isn’t just a green veggie like other beans. Those bright green pods are full of soybeans, which are absolutely packed with protein. So this extra-simple meal actually provides plenty of fuel to keep you going through the afternoon.
Never had edamame before? Don’t worry – it’s easy to eat, and fun, too. Just dip the pod in the soy sauce, bring it up to your mouth, and squeeze it so the bean pops right between your lips. Alternate that with bites of rice – eaten with chopsticks if you want the real Japanese experience, or with a fork if all you want is a quick lunch.
Edamame Easy Lunchbox Idea
- 32 oz steamed edamame
- 2 cups white rice
- 8 oz soy sauce
- 4 clementine oranges
- Cook rice and edamame according to package.
- Divide ingredients between your 4 lunchboxes.
- Cover and refrigerate until ready to use. Use within 2-3 days.
