The idea of Mexican food for breakfast is nothing new. Breakfast burritos, loaded with eggs, cheese, and salsa, are basically a staple these days. They’re incredibly handy as a grab-and-go breakfast for busy mornings, especially because you can eat them with one hand.
In fact, breakfast burritos are so common now that I think people are starting to get a little tired of them. So when I was thinking about writing up my own recipe for a grab-and-go Mexican breakfast, I decided not to do burritos. Instead, I went for something even smaller and more convenient – taquitos!
These little baked roll-ups are kind of like egg rolls, with fillings stuffed inside a crispy outer shell. But since they’re baked, not fried, they’re much easier to make. Just roll up your filling – scrambled eggs with sausage, bell pepper, garlic, and taco seasoning – in warm tortillas, making tight little rolls. Lay them out in a baking dish, top with cheese, and bake.
Crispy, golden, and bursting with zesty flavor, these Breakfast Taquitos are the perfect size for little hands to grab as their owners head out the door. And, on less busy mornings, they’re also great to sit down and enjoy with your favorite Mexican toppings.
Recipe Notes:
- Medium Heat Magic: For the perfect egg scramble, cook them over medium heat. This ensures they don’t overcook and remain fluffy.
- Sour Cream Secrets: Add a dollop of sour cream on top of your taquitos for a creamy contrast to the savory filling.
- Flour Tortillas Flexibility: Warm tortillas in a hot skillet or microwave to make them more pliable. This prevents cracking when you roll them.
- Seam Side Success: Always place the taquitos seam side down in the baking dish to prevent them from unrolling while baking.
- Air Fryer Adaptation: For a crispier twist, try making air fryer breakfast taquitos. They cook faster and get that desired golden brown texture.
- Cooking Spray is Key: Lightly coat the baking dish with cooking spray to prevent sticking and ensure easy removal of taquitos.
- Sausage Links Swap: Feel free to swap traditional sausage with Italian sausage or even vegan options like tofu scramble for a different flavor profile.
- Meal Prep Mastery: These taquitos are great for meal prep. Wrap them individually in plastic wrap and reheat for busy mornings.
- Baking Dish Dimensions: Ensure your baking dish is big enough to fit all your taquitos without squishing them.
- Parchment Paper Perks: Lining your baking sheet with parchment paper makes cleanup a breeze.
Absolutely! Assemble the taquitos, place them in a baking dish, cover with plastic wrap, and refrigerate overnight. Bake them in the morning for a quick breakfast.
Yes, they freeze well. Wrap each cooled taquito in plastic wrap and freeze. Reheat in the oven or microwave when ready to eat.
Yes, but they might crack more easily. Warm them properly to increase flexibility.
Substitute sausage with a tofu scramble or additional veggies like spinach and sun-dried tomatoes for a vegetarian version.
Ingredients needed: See Recipe Card Below for FULL Recipe.
- Sausage: The star of the dish, providing a hearty, savory flavor. Jones Dairy Farm sausages are a great choice for quality and taste.
- Garlic: Adds a pungent, aromatic flavor that enhances the overall taste of the taquitos.
- Red Bell Pepper: Offers a sweet, mild flavor and adds a pop of color.
- Taco Seasoning: Brings a Mexican flair to the dish, infusing it with traditional spices and herbs.
- Eggs: Whisked eggs create a fluffy, rich base for the taquitos, binding all ingredients together.
- Flour Tortillas: The vessel for all the delicious fillings. Ensure they are warmed for easy rolling.
- Cheese: Adds a creamy, melty element that pairs perfectly with the sausage and egg.
- Garnishes (Salsa, Sour Cream, Cilantro): These add freshness, creaminess, and an extra layer of flavor.
