Italian Sausage Manicotti
- Cook pasta for 5 minutes in salted water. Drain and set aside. Drain spinach by wrapping in a paper towel and squeezing tightly allowing all water to come out.

- In a skillet cook sausage until no longer pink and drain fat.

- Add onion and garlic, cook until softened, 2-3 minutes Take off heat and allow it to cool.

- Preheat the oven to 375 and prepare a 9X13 baking dish with cooking spray, set aside. In a small bowl add ricotta, egg, italian seasoning, fresh basil, salt, pepper, and sausage mixture.

- Combine and add into a piping bag. Pour your marinara sauce into your pan.

- Fill cooked manicotti with mixture and place into your pan.


- Top with mozzarella cheese and cover with foil.

- Bake for 25 minutes covered and 10 minutes uncovered.

- Top with fresh basil!

- 14 Manicotti Pasta
- 1 lb Italian sausage
- 16 ounces Ricotta
- 1 & 1/2 cups Shredded Mozzarella
- 2 Tablespoons Fresh Basil minced
- 1/2 cup Frozen Spinach thawed and drained of any liquid
- 24 Ounces Marinara Sauce
- 1 egg
- 5 Garlic cloves finely minced
- 1 Sweet Onion Diced
- 1 Teaspoon Kosher Salt
- 1 Teaspoon Black Pepper
- 1 Teaspoon Italian seasoning
- Basil for garnish
