THE BASICS: Oats, peanut butter, peanuts, and some coconut oil are what keeps the granola together!

Try other nut or seed butters. Agave can be swapped for maple syrup, honey, or monk fruit syrup.

Old-fashioned oats are less processed than instant oats and will produce crunchier granola while instant oats make for a chewier bar.

MIX-INS: As long as the ratio of peanut butter to coconut oil and agave is relative to the mix-ins to hold everything together, add mini-chocolate chips, chunks of dark chocolate, or chopped dried fruit like bananas, cherries, cranberries, or raisins.

Peanut Butter Granola

Granola gets a little sweeter with the addition of peanut butter! Also made with agave syrup, coconut oil, peanuts, and oats this granola is toasted to perfection and makes a great addition to parfaits, yogurt, and more!

  • Preheat the oven to 325°F.

  • Line a baking sheet with parchment paper and set it aside.

  • In a medium-sized microwave-safe bowl, whisk together peanut butter, agave, melted coconut oil, salt, and vanilla.

  • Microwave for 20 seconds and whisk again.

  • In a large mixing bowl, mix together oats & nuts until fully combined.

  • Pour the peanut butter mixture into the oat mixture and fold together using a rubber spatula, covering all pieces of nuts and oats.

  • Spread the granola evenly on the prepared baking sheet and bake for 20 minutes.

  • Remove from the oven, rotate the granola, and return to the oven for 10 minutes.

  • Remove from the oven and let cool for 1 to 2 hours.

Agave can be substituted for maple syrup or honey, although those flavors may be stronger than agave.
Use old-fashioned oats over 1-minute oats or 3-minute oats as they will become too soft.
Peanuts can be swapped for a different nut or omitted altogether.
