Creamy burrata cheese is arranged with tomatoes and onion and then tossed with arugula. It’s all drizzled with balsamic and a bit of pesto for the perfect summer salad recipe.

What is Burrata Salad?
- Burrata is happiness. Seriously though, this cows milk cheese is similar to fresh mozzarella but made with extra heavy cream in the middle which gives recipes a rich, creamy flavor & texture.

Burrata – Burrata cheese is soft and extra creamy. If you can’t find burrata, opt for a fresh mozzarella or bocconcini.
Tomatoes – Bright red tomatoes fresh from the garden or farmer’s market are the best choices. Cherry tomatoes or grape tomatoes can be cut in half.
Greens – Arugula has a bright peppery bite that goes with anything. Choose salad greens like romaine, spinach, kale, or any crispy leaves that hold up well with chunks of tomatoes and cheese. Add in fresh herbs like basil, parsley, or even a bit of fresh dill.
Drizzle – Oil and balsamic vinegar (or glaze) are really all this salad needs for dressing. Pesto is a great addition to all of your fave summer salad recipes! If you’d prefer, you can use a balsamic vinaigrette.
Optional Variations

Tomato Burrata Salad
Made with fresh garden tomatoes and drizzled with a tangy balsamic glaze and some hard-to-resist burrata cheese, this salad is one for the recipe books!

Slice the tomatoes ¼” thick and place over the greens. Top with red onion.

Tear the barrata into pieces and arrange over the tomatoes.
