Ingredients for This Watermelon Cocktail
Gin
For this cocktail, I recommend using a London Dry Gin that’s fairly floral. I like Bloom Gin which has more citrus and floral notes and less juniper and overall “heat.”
Watermelon
I prefer to use Black Diamond watermelon for this recipe. This type of watermelon has a vibrant pink flesh and a dark green rind. It’s super sweet and labeled as “seedless,” which just means it has less seeds than traditional watermelons.
Lemon
If it isn’t fresh, we don’t want it! Fresh lemon juice is blended with the watermelon to create a sweet-tart juice. Without the gin, this is a delicious watermelon lemonade.
Honey
Most classic gin fizz recipes are made with a bit of simple syrup. This recipe skips the simple syrup and instead sweetens the watermelon juice with honey. This quick swap makes shaking up the cocktail a breeze.
Egg White
Egg white is traditional in gin fizz and for good reason. When shaken (without ice) the egg white gets aerated and creates a silky cocktail with a deliciously foamy head. The use of fresh eggs is traditional in cocktail making, but I prefer to use egg whites from a carton for a couple of reasons. First, it’s just easier and less fussy. And two, it’s actually safer because the egg whites are pasteurized.
Club Soda
Most gin fizz cocktails get a splash of club soda right before serving. It simply adds a little effervescence. If you don’t have any on hand, no worries. Don’t let that keep you from making this. The cocktail is just as delicious with it as it is without it.
Step-By-Step Instructions
Step 1: Make the watermelon juice
Add the watermelon, lemon juice and honey to a blender. Blend until smooth.
Step 2: Strain the watermelon juice
Strain the juice through a fine mesh sieve then discard any pulp.
Step 3: Dry shake the ingredients
Add the watermelon juice, gin, and egg white to a cocktail shaker. Secure lid and shake vigorously until pale-pink, about 15 seconds.
Step 4: Shake with ice to chill
Fill the shaker with ice, secure lid, and shake again until well-chilled, about 15 seconds.
Step 5: Garnish and enjoy
Strain the cocktail over a few ice cubes into a rocks or collins glass. Top the cocktail off with a splash of chilled club soda. Garnish with a watermelon wedge and serve immediately.
Expert Tips
- For ease of preparation and cleanup, I like to use an individual blender cup instead of my full-size blender. If you go this route, you may need to blend half of the watermelon before adding the other half, just to make space.
- The watermelon juice can be made up to 3 days ahead of time. Store it in an airtight container in the refrigerator.
- If you don’t want to use an egg white, no problem! Simply skip it and just shake the cocktail with ice from the start.

For 1 drink:
- 3 ounces watermelon juice
- 2 ounces London Dry gin
- ¾ ounce egg white (1 egg white)
- Club soda, to top (about ½ ounce)
Instructions
Watermelon Juice
- Add watermelon, lemon juice and honey to a blender and blend until smooth. Pass through a fine-mesh sieve. Discard pulp.
Watermelon Gin Fizz
- Add 3 ounces watermelon juice, 2 ounces gin, and egg white to a shaker and dry-shake (without ice) for about 15 seconds.
- Add ice and shake until well-chilled.
- Double-strain into a highball glass or rocks glass over 2 ice cubes.
- Top with the club soda.
- Garnish with a watermelon wedge.
